Why did I start Below Eleven?
Below 11 was first whipped up as the dream of French entrepreneur Hervé Mouly, a long-time Bangkok resident, who simply wanted the best ice cream for his two young daughters. From his earliest age in France’s Bordeaux region, his grandmother spoiled him with slow-cooked meals and the most delicious desserts made from scratch, using the freshest natural ingredients. What started as a not-so-simple search to recreate his grandmother’s homemade ice cream has now turned into a talk-of-the town business, Below 11.
Since no commercial ice creams made the grade, the conscientious dad continued his search checking out high-end restaurants and visiting top chefs all over the world. He watched them show off their ice-cream making skills and listened carefully to their tips. That was all he needed. Yes, Hervé’s kids were going to have the best ice cream in town… made in his own kitchen!
Hervé’s personal challenge was set in motion, experimenting and playing with recipes to get the taste, texture and body right. Friends started asking him to bring his ice cream to their events and he generously shared his creations at French Embassy gatherings and other official functions. He gained a new name and recognition from his ice cream, which became a word-of-mouth hit overnight. Below 11 was born!
Guided by the legendary French values for freshness, quality and exquisite flavor, Hervé learned the science and secrets behind ice cream making. He joined prestigious chocolate and pastry ateliers in France, to understand more about ingredients and flavors, and mixing them in a mindful way. Love for his kids, a childhood nostalgia for his grand-mère’s natural ice cream, commitment to the highest standards … the sweet, delicious love affair of Hervé, the French artisan, has just begun.

Our signature flavor, vanilla, is unique for being the only ice cream in Bangkok that uses 100% fresh Tahitian vanilla beans. Its floral aroma with tones of delicately ripened fruit makes this sweet treat an absolute standout. An enlightened choice that is truly worth every cent and more for its full, rich flavor.
We use real fruit in all our sorbets – no food coloring, no artificial flavor, and no fruit concentrates. We prepare our sorbets with 50% real fruit, so it’s all healthy and natural.
Fresh cream is flown in from Normandy, France, while farm fresh eggs are meticulously selected and delivered to our doorstep.
